We begin by going through a general outline for service. Then, we move on to the soft skills of hospitality. Lastly, we explore practical ways to approach cocktail menu development.
This course covers:
- The four phases of service, from pre-order, order taking, drinking and dining, to closing out
- A bartender's sequence of service
- Tips for delivering exceptional guest experiences and winning repeat guests
- Mistakes, and how to avoid them, on and off shift
- How to apply the MAYA principle to develop a cocktail menu that appeals to your guests
- Tips for how to manage wastage during menu development
- How to bring craft bartending to any bar.

Learning all the different types of cocktails may feel so daunting. But the good news is that there's actually a system that groups these cocktails and makes them much easier to learn! Each cocktail is categorised into one of seven different families:
- Stirred cocktails
- Sour cocktails
- Highballs, Bucks and Collins
- Cobblers, juleps and swizzles
- Fizzy cocktails
- Egg and cream cocktails
- Punches.
Cocktail families are grouped by similarities in ingredients, preparation, glassware and garnish.
This course will deconstruct each family, helping you to learn and recall recipes without consulting a recipe book; recommend cocktails to guests and curate a dynamic beverage menu. The goal of this course is to help you make better cocktails. Here we study flavour, balance, texture and presentation as elements of a cocktail, and we move further to explore the tools, techniques, glassware and garnishes involved in making each of these.
